Château Les Pasquets
50% Sauvignon Blanc, 40% Sémillon, 10% Muscadelle
Situated in Daubèze at 330 feet above sea level, the vineyards of Château Les Pasquets enjoy an ideal exposition and the soils are particularly fertile. The property is the result of successive associations between farming families. Historically they combined viticulture with crop and livestock farming. The grandchildren of the Sahunet and Delugin families opted to specialize in viticulture in the middle of the 1970s creating Château Les Pasquets.WINEMAKING & VINTAGE NOTES
This estate owned by the family Sahunet for many generations is located on the hills overlooking the Dordogne River. The vines are covering 50 acres of hilly alluvium and clay land with ideal sun exposure.
On reciept, the harvest goes through a period of maceration that lasts between 9 and 18 hours, in stainless steel vats at a temperature of 59°F–65°C, to extract the maximum flavor. Then the alcoholic fermentation takes place on fine lees.TASTING NOTES
With a pale straw yellow color with green hues and a fresh, pure bouquet with refreshing citrus and floral aromas, this wine is very elegant. Les Pasquets Entre-Deux-Mers is a wine with crisp acidity and lots of good structure with a lingering finish.
This wine could be served with starters, fish or seafood. Also perfect with almond trout, barbeque grilled pork, charcuterie platters, grilled sardines, lasagna, marinated salmon with dill, mussels, onion dishes and pesto pasta.
