Jean-Claude Mas, independent winemaker, fourth generation grape grower, first generation winemaker and owner of Domaines Paul Mas, is a leader in fine winemaking in the Languedoc region of the South of France. Since taking the helm of the family winery in 2000, he has prioritized sourcing the highest quality grapes from twelve privately owned estates and premier growers in the Languedoc to make wines of authenticity and refinement. Soil type: Clay and limestone. Mediterranean climate, with oceanic influence. Entire bunches pressing out with pneumatic press. Racking at low temperature. Fermentation at controlled temperature. Traditional method: first fermentation in vat then bottle fermentation follows (second fermentation). Bottles rest for nine months at least on laths in an air-conditioned cellar. Bottle disgorging is done, then a “liqueur d’expédition” is added and then finished with the cork plugging.TASTING NOTES
Bright and clear yellow, fine and numerous bubbles. Intense and refined, white flower aromas. Fresh on the palate with elegant bubbles. This sparkling wine is delicious before lunch and dinner, but will be also great with fish.
