Villa Il Palagio estate lies amid the rolling hills of the lush, fertile Tuscan countryside south of Florence in Chianti Colli Fiorentini. The private home of Sting and his wife Trudie Styler, this truly remarkable sixteenth-century estate has been totally renovated and includes: 65 acres of vineyards, 8,000 olive trees and 80 bee colonies amongst numerous other agricultural endeavors. All wines produced at Il Palagio are organic and certified by BioAgricert.
In Tuscany and particularly the Chianti area, when spring comes it is traditional to begin to drink the wine from the last harvest. Named after the Sting song, “When We Dance” is a glorious ruby red with a balanced and smooth palate.
Winemaking & Vintage NotesThe soil is a medium blending with presence of sand, clay rich of magnesium and calcium. Vineyard exposure is South – South/East.
Harvests took place at the beginning of October. The grapes were hand-harvested from several locations in Florence located over 1,000 feet above sea level.
Maceration period lasted seven days. Alcoholic fermentation carried out in temperature controlled stainless steel vats, with pumping over four times a day and punching down two times a day, in order to extract all of the grapes’ finest qualities.
The wine is aged for sixth months in stainless steel and three months in bottle.
Tasting NotesAromas of ripe black cherries, sandalwood, cedar and strawberry compote. Texturally even and balanced bright acidity, juicy fruits and a joyful, lingering sense of the vineyards at Il Palagio. Perfect accompaniment to pasta, fish and traditional Tuscan recipes.
