A devotee of the Syrah grape and armed with a pharmacy degree, Jean-Luc and his wife, Anne, opened their wine laboratory in 1984, “Centre Oenologique des Côtes du Rhône” and quickly developed a thriving reputation as a wine consultant throughout France. For their significant life-long contributions to their country, both Jean-Luc and Anne have been awarded the French Legion of Honor, France’s highest civilian award. The Colombo’s innovative approach in the northern appellation of Cornas was nothing short of revolutionary. “Les Girelles” is named after the local fish in the Mediterranean (the Rainbow Wrasses); This wine’s delicate balance accompanies it well.
Vines are planted on stony limestone soil on a plateau surrounded by pine forests and overlooking at the Lake Thau. The Mediterranean climate with maritime influences. Mediterranean vegetation (thyme, lavender, live oaks, pine trees…) surrounds the vineyards.
The wine undergoes controlled fermentation and maceration at 65ºF, 100% in stainless steel tanks.TASTING NOTES
Elegant, dry style with subtle, perfumed notes including white flowers. A rounded and fresh mouthfeel with good structure. This wine is perfect with shellfish and local fare as its high natural acidity accompanies it well, similar to wines from the North such as Melon de Bourgogne that marries with fish of all types.
Lovely as an aperitif or with any seafood appetizers and or seafood main courses such as small fried fish. Great with goat cheese, salads, chicken dishes and crab cakes.
