Traditional Pinot Noir vinification. Grapes are selected and handharvested from late March to early April. Cold soak lasts from 3–5 days before fermentation between 57°F–82°F. Barrell aged in 100% French oak for 12 months. It can be enjoyed immediately or cellared for 8 years.TASTING NOTES
Goes well with chicken, pork, rare fillet steak, pasta, mushrooms, oriental dishes, sushi, risotto, or on its own.
