The Marsanne grapes grow on the limestone and clay soils of the Limoux and Carcassonne areas, with some grapes from the warmer area of Hérault. Grapes undergo fermentation in stainless steel vats for 10–15 days at a temperature of 57–59°F. 25% of the juice ages in oak barrels for three months while 75% of the juice ages in stainless steel. The blend is released after one month of bottle ageing.TASTING NOTES
Very bright gold yellow straw tints. White flower aromas, pears and honeydew melon. Round with a good acidity which makes this wine fresh and lively to drink. The finish is very elegant with note of acacia honey. Pairs well with shell-fish, poached or grilled seafood, cold lemon dressing salads, quiches and fruit tarts.
